My Pork and Chicken BBQ

This is my perfect barbecue. Over the years, i have experimented with several marinade and so far this is the best. I think chicken legs and pork ribs are the best for BBQ.

1/2 kilo of chicken (i prefer legs)
1/2 kilo of pork ribs
1 cup Hickory BBQ sauce (any brand) *
1 tbsp soy sauce
1 tbsp of ketchup
1 tsbp of garlic powder (or 1/2 head garlic, minced) *
1/3 lemon juice (or calamansi) *
1/2 tsp of cayenne pepper
lots of ground pepper *

1 tsp of crushed red pepper (optional)

For me, the ones with asterisk* are the secret to making this marinade really tasty so you can add or reduce them to suit your taste.

Procedure:
1. Wash chicken and pork well, drained
2. In a bowl, combine marinade. Mixed well and pour into a zip bag. This is a trick to getting all that flavor into the meat. It also gives me a chance to massage the meat a little to get the flavor inside. Marinate for at least 4 hours (overnight is better).
3. When ready to grill, use the same sauce for basting. Adding some vegetable oil on it so our bbq doesn’t dry out. Grill to your preference. I prefer slightly burnt outside (burned chicken skin is my favorite).

Dip: Vinegar with crushed garlic, chopped onion and some chilli… oh my, with hot steamy rice.. this is a feast! (Nothing can beat kaing Pinoy style, kamayan blues!)
